This recipe comes from our family friends the Nickens. I have my dad's creole jambalaya recipe already on the blog, but both types are delicious.
4 onions chopped
3 green peppers chopped
4 toes of garlic
15 chicken thighs
4 tsp salt
2 lbs cooked sausage
6-7 c water
fresh parsley
2/3 bottle of Kitchen Bouquet
2 lbs Mahatma rice
1 1/2 tsp cayenne
bay leaves
Cook all veggies in 2 c water. Add cooked sausage and 6-7 cups water, salt, cayenne, Kitchen Bouquet, and chicken. Cook on top of stove 20 minutes. Add rice. Cook until rice swells. Cover and place in 375° oven for 20 minutes. Top with chopped green onions.
